Ingredients


For the Salad

  • 2 boneless, skinless chicken breasts

  • 1 ripe mango, peeled and sliced

  • 4 cups mixed greens (spinach, arugula, or romaine)

  • 1/4 red onion, thinly sliced

  • 1/4 cup cherry tomatoes, halved (optional)

  • 1/4 cup crumbled feta or goat cheese (optional)

  • 1 tablespoon olive oil (for grilling)

  • Salt and pepper, to taste


For the Lime Vinaigrette

  • 3 tablespoons olive oil

  • 2 tablespoons freshly squeezed lime juice

  • 1 teaspoon honey or agave syrup

  • 1/2 teaspoon Dijon mustard

  • 1/4 teaspoon garlic powder

  • Salt and pepper, to taste


Instructions


1. Marinate and Grill the Chicken

  1. Season the chicken breasts with salt and pepper.

  2. Heat a grill or grill pan over medium-high heat and brush it with olive oil.

  3. Grill the chicken for 4–5 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).

  4. Let the chicken rest for 5 minutes before slicing it into thin strips.


2. Prepare the Lime Vinaigrette

  1. In a small bowl or jar, whisk together olive oil, lime juice, honey, Dijon mustard, garlic powder, salt, and pepper until emulsified. Taste and adjust seasoning as needed.


3. Assemble the Salad

  1. Arrange the mixed greens on a large plate or in a salad bowl.

  2. Top with grilled chicken slices, mango slices, red onion, and cherry tomatoes (if using).

  3. Sprinkle with crumbled feta or goat cheese, if desired.


4. Dress and Serve
