Ingredients
For the Salad
2 boneless, skinless chicken breasts
1 ripe mango, peeled and sliced
4 cups mixed greens (spinach, arugula, or romaine)
1/4 red onion, thinly sliced
1/4 cup cherry tomatoes, halved (optional)
1/4 cup crumbled feta or goat cheese (optional)
1 tablespoon olive oil (for grilling)
Salt and pepper, to taste
For the Lime Vinaigrette
3 tablespoons olive oil
2 tablespoons freshly squeezed lime juice
1 teaspoon honey or agave syrup
1/2 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Salt and pepper, to taste
Instructions
1. Marinate and Grill the Chicken
Season the chicken breasts with salt and pepper.
Heat a grill or grill pan over medium-high heat and brush it with olive oil.
Grill the chicken for 4–5 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before slicing it into thin strips.
2. Prepare the Lime Vinaigrette
In a small bowl or jar, whisk together olive oil, lime juice, honey, Dijon mustard, garlic powder, salt, and pepper until emulsified. Taste and adjust seasoning as needed.
