Ingredients
2 cups cooked, shredded chicken (rotisserie or poached chicken breasts work well)
½ cup plain Greek yogurt (use full-fat or low-fat based on preference)
1 tbsp mayonnaise (optional, for extra creaminess)
½ cup diced celery
½ cup diced red bell pepper
¼ cup diced red onion
¼ cup chopped fresh parsley or cilantro (optional)
1 tbsp fresh lemon juice
1 tsp Dijon mustard
Salt and black pepper to taste
4 large whole-grain wraps or lettuce leaves (for a lower-carb option)
Optional Add-Ins
¼ cup diced cucumber or grated carrot (for added crunch)
1 tbsp chopped fresh dill (for extra flavor)
1 tbsp sunflower seeds or chopped walnuts (for added texture)
Instructions
Prepare the Chicken Salad: In a large bowl, combine the shredded chicken, Greek yogurt, and (if using) mayonnaise. Mix until the chicken is well-coated.
Add the Vegetables and Flavorings: Add in the diced celery, bell pepper, red onion, and parsley (or cilantro). Stir to combine.
Season the Salad: Add the lemon juice, Dijon mustard, salt, and black pepper. Mix until everything is evenly coated. Taste and adjust seasonings as needed.
Assemble the Wraps: Place a large spoonful of the chicken salad mixture in the center of each whole-grain wrap or lettuce leaf.
Roll and Serve: Wrap tightly, folding in the sides as you roll, and slice in half if desired. Serve immediately, or refrigerate for up to 3 days.
Tips
Meal Prep: Make the chicken salad ahead of time, and assemble wraps just before eating for freshness.
Serving Suggestions: Pair with a side of fresh fruit or a mixed green salad for a complete, balanced meal.
Enjoy these Greek Yogurt Chicken Salad Wraps as a light yet satisfying lunch or snack!
