I will save you the time of scrolling through all the junk to get the actually recipe you want!

Ingredients

  • 2 cups cooked, shredded chicken (rotisserie or poached chicken breasts work well)

  • ½ cup plain Greek yogurt (use full-fat or low-fat based on preference)

  • 1 tbsp mayonnaise (optional, for extra creaminess)

  • ½ cup diced celery

  • ½ cup diced red bell pepper

  • ¼ cup diced red onion

  • ¼ cup chopped fresh parsley or cilantro (optional)

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • Salt and black pepper to taste

  • 4 large whole-grain wraps or lettuce leaves (for a lower-carb option)

Optional Add-Ins

  • ¼ cup diced cucumber or grated carrot (for added crunch)

  • 1 tbsp chopped fresh dill (for extra flavor)

  • 1 tbsp sunflower seeds or chopped walnuts (for added texture)

Instructions

  1. Prepare the Chicken Salad: In a large bowl, combine the shredded chicken, Greek yogurt, and (if using) mayonnaise. Mix until the chicken is well-coated.

  2. Add the Vegetables and Flavorings: Add in the diced celery, bell pepper, red onion, and parsley (or cilantro). Stir to combine.

  3. Season the Salad: Add the lemon juice, Dijon mustard, salt, and black pepper. Mix until everything is evenly coated. Taste and adjust seasonings as needed.

  4. Assemble the Wraps: Place a large spoonful of the chicken salad mixture in the center of each whole-grain wrap or lettuce leaf.

  5. Roll and Serve: Wrap tightly, folding in the sides as you roll, and slice in half if desired. Serve immediately, or refrigerate for up to 3 days.

Tips

  • Meal Prep: Make the chicken salad ahead of time, and assemble wraps just before eating for freshness.

  • Serving Suggestions: Pair with a side of fresh fruit or a mixed green salad for a complete, balanced meal.
