Garlic Butter Steak with Roasted Potatoes and Broccoli

Ingredients:


For the steak:


  • 2 ribeye or sirloin steaks (about 1 inch thick)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 4 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • Fresh herbs (rosemary or thyme) for garnish (optional)


For the roasted potatoes:


  • 4-5 medium-sized potatoes, washed and cubed

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • Salt and pepper to taste


For the roasted broccoli:


  • 2-3 cups broccoli florets

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste


Instructions:


  1. Preheat your oven to 400°F (200°C).

  2. Prepare the potatoes: In a bowl, toss the cubed potatoes with olive oil, paprika, salt, and pepper until evenly coated. Spread them out on a baking sheet lined with parchment paper and roast in the oven for 30-35 minutes or until golden and crispy, flipping them halfway through.

  3. Prepare the broccoli: On another baking sheet, toss the broccoli florets with olive oil, minced garlic, salt, and pepper. Spread them out on the baking sheet and roast in the oven for 15-20 minutes until they start to brown at the edges.

  4. While the potatoes and broccoli are roasting, prepare the steak: Pat the steaks dry with paper towels and season generously with salt and pepper on both sides.

  5. Heat a skillet or cast-iron pan over medium-high heat. Add olive oil and sear the steaks for 3-4 minutes on each side for medium-rare (adjust cooking time according to desired doneness). Once cooked, remove the steaks from the pan and let them rest for a few minutes.

  6. In the same pan over medium heat, add butter and minced garlic. Cook until the garlic is fragrant and the butter begins to brown slightly. Pour the garlic butter over the rested steaks.

  7. Once the potatoes and broccoli are done roasting, serve them alongside the garlic butter steak. Garnish the steak with fresh herbs if desired.
